OVEN BAKED CHICKEN
Baked chicken breasts are so juicy and tasty! Forget dry chicken with our simple and easy winning recipe. Deliciously seasoned before baking until golden brown with mouthwatering crisp edges!
INGREDIENTS
- 2 3/4 cups water
- 1/2 cup of Hoisin sauce
- 1 1/2 cup chicken broth
- 1/2 cup peanuts
- 6 to 8 chicken thighs, with or without bones
- 1 1/2 cup long grain rice
- 1 1/2 tablespoon rice wine vinegar
INSTRUCTIONS
First, preheat the oven to 180 ° C with the baking dish in the oven.
Then, once warmed, remove the pan from the oven, add the rice, broth and water, cover with foil and return to the oven for 25 minutes.
In a food processor, combine the peanuts, hoisin, rice wine vinegar and a pinch of salt.
Place the chicken in a bowl and rub this marinade all over.
Remove rice from oven, top with chicken thighs, pour over any additional marinade, cover with foil and cook for another 10 minutes.
Remove the pan from the oven again, remove the foil and cook, uncovered, for 15 minutes.
Peel the rice with a fork and serve sprinkled with parsley.

NOTES
If your chicken thighs are big enough like mine. Return to the oven for another 10 to 15 minutes. I turned my oven to 200 ° for this last cook so that the tops are really golden brown.
This recipe works best if the chicken thighs cover the rice, so you need a dish that fits 6 chicken thighs perfectly, or you will have sections of crispy rice.
