Salt and Pepper Fish Fillet
I tried this amazing fish dish at a Chinese restaurant in New York. The fillets are cut into bite-size pieces and dipped in a light batter and fried, then lightly incorporated into the chopped garlic and ginger. Here, I try to reproduce it at home and the result is not at all bad. You can always replace the fish fillets with shrimp or squid.
Ingredients
The main ingredients
- 1 red pepper, sliced
- 2 spring onions, chopped
- ⅓ cup avocado oil for frying
- Salt and pepper to taste
- 2 teaspoons of chopped ginger
- 1 teaspoon of cane sugar
- 800 grams of cod fillets cut into bite-size pieces
- 6 garlic cloves, minced
- 1.5 tablespoon dry sherry wine
Fish marinade
- 1 egg
- 1 teaspoon of salt
- 6 tablespoons of cornstarch
- 2 tablespoons of dry sherry wine
- 1 teaspoon of pepper
INSTRUCTIONS
First, dry the fish and cut it into small pieces. This step is very important.
Then, in a mixing bowl, combine the ingredients for your marinade. Marinate the fish in the batter.
In a saucepan with avocado oil over high heat, fry your breaded fish until golden and crisp, about 7 minutes. Remove the fish from the pot. Pour in the oil.
In the same saucepan over medium heat, sauté the ginger, garlic, red pepper, green onion and sugar. Add the breaded fish. Pour the Dry Sherry on top. Fry for 1 minute and serve. Season with salt and pepper to taste. Happy Cooking Time.
