Greek Lemon Rice






This lemon rice recipe is so good, you'll want to eat it plain, straight out of the jar! This is Greek rice made with sautéed onion and garlic, rice cooked in chicken broth then finished with lemon and herbs.

INGREDIENTS

  • 1 lemon
  • ½ medium onion, thinly sliced
  • 4 cups of chicken broth
  • 1 tablespoon Greek seasoning
  • 2 cups long grain white rice
  • 1 teaspoon of olive oil
  • 2 garlic cloves, minced
  • 2 tablespoons of chopped parsley

INSTRUCTIONS

First, heat the oil in a large saucepan over medium heat.

Then, when hot, add the rice, onion and garlic and cook, stirring often, until the rice is lightly browned at the tips and the onions are soft.

Add the chicken broth and Greek seaosning to the pot and stir to combine. Bring to a boil, cover and cook for 15 minutes over medium-low heat.

Turn off the heat and let the pan stand, covered, for 10 minutes.

Remove the lid from the pot and peel the rice with a fork.

Use a microplane grater to zest the lemon and add it to the rice. Cut the lemon in half and squeeze the lemon juice into the rice. Add the parsley and stir.

Serve hot.
