CORN, AVOCADO, AND TOMATO SALAD
This CORN, AVOCADO & TOMATO SALAD is a bright and enjoyable salad that is packed with grilled corn, creamy avocado, cherry tomatoes and the dressing gives it an incredible fresh flavor. It's a fresh corn salad that everyone will love and always disappears quickly!
INGREDIENTS
- 1/2 cup finely chopped red onion
- 1 to 2 avocados, cut into 1/2-inch cubes
- 2 cups cooked corn, fresh or frozen (see Note)
- 1 pint of cherry or grape tomatoes, halved
Pad:
- 1/4 teaspoon of salt
- 1/2 teaspoon grated lime zest
- 1/4 teaspoon pepper
- 2 tablespoons of olive oil
- 1 tablespoon of fresh lime juice
- 1/4 cup chopped cilantro
INSTRUCTIONS
Combine corn, avocado, tomatoes and onion in a large glass bowl. Combine dressing ingredients in another bowl, pour over salad and toss gently to combine. Refrigerate the salad for an hour or two for the flavors to blend.

Fresh corn is really best to use here.
