CHOCOLATE COATED HOBNOBS


 CHOCOLATE COATED HOBNOBS



Oatmeal and brittle, buttery and chewy and covered in chocolate.

They differ slightly from the packaged version, a touch softer, but we like them more. I'm happy that i do know exactly what's in it, and I'll definitely roll in the hay again.


INGREDIENTS

125g unsalted butter

80g sugar

2 tablespoons treacle

100g quick oats

100g flour

½ teaspoon bicarbonate of soda

½ teaspoon leaven

½ - 1 teaspoon sea salt, to taste

100g of chocolate

10 grams of butter

INSTRUCTIONS

1.Preheat the oven to 180 C (350 F) and line several baking sheets with parchment paper.

2.In a stand mixer equipped with a paddle attachment, beat the butter and sugar until they're pale and smooth.

3.Add the treacle and beat until combined.

4.At low speed, stir within the oats, flour, soda, leaven and salt.

5.Roll alittle tablespoon of dough into a ball and spread it out on a plate, until it's about 2 inches in diameter. Leave space between the cakes to opened up .

6.Bake for 10 to 12 minutes.

7.Melt the chocolate and butter together during a heat-safe bowl over a pot of boiling water.

8.Pour a teaspoon of chocolate on rock bottom of every cookie and spread it evenly. Let stand before tasting / steeping tea. Makes 20 pans.
