ZESTY LIME SHRIMP AND AVOCADO SALAD
Talk about a light and refreshing salad that requires no cooking! Lime juice and cilantro are the key ingredients in creating this wonderful, healthy salad that you'll want to make all summer long.
INGREDIENTS
- 2 limes, juice
- 1 medium tomato, diced
- 1 lb jumbo shrimp, cooked, peeled, chopped
- 1 medium hash avocado, diced (about 5 oz)
- 1 jalapeño pepper, seeded and finely diced
- 1/4 cup chopped red onion
- 1 teaspoon of olive oil
- 1/4 teaspoon kosher salt, black pepper to taste
- 1 tablespoon of chopped cilantro
INSTRUCTIONS
First, in a small bowl, combine the red onion, lime juice, olive oil, salt and pepper. Let them marinate for at least 5 minutes to soften the flavor of the onion.
Then, in a large bowl, combine the chopped shrimp, avocado, tomato and jalapeño pepper.
Combine all the ingredients, add the cilantro and mix gently. Adjust salt and pepper to taste. Happy Cooking Time.
