Shrimp and Sausage Stew
This special gourmet style dinner will only take about 40 minutes from start to end . The ingredients are common, apart from fennel bulbs and perhaps hot Italian sausage. And it's these two elements that help compile all the delicious flavors.
INGREDIENTS
2 tablespoons of additional virgin vegetable oil
1 large fennel bulb, chopped and chopped (about 2 cups into 1/2 inch chunks)
4 garlic cloves, roughly chopped
2 small shallots, chopped
12 ounces of loose hot Italian sausage
1 1/2 cups dry wine
1/4 cup ingredient
2 1/2 cups chicken broth
1 bay leaf
1 pound large shrimp (21-30 / pound), peeled and discarded
2 cups white beans, rinse and drain
1/2 cup fresh basil, chopped
1 tablespoon chopped fresh thyme
kosher salt and black pepper to taste
INSTRUCTIONS
1.Heat the oil over medium-high during a large heavy skillet.
2.Add the fennel, garlic and onion and cook, stirring occasionally with a wooden spoon, until the vegetables are soft, about 10 minutes.
3.Add the sausages and mash with a spoon. Cook until the sausages are golden brown, about 5 minutes.
4.Add the wine and use a spoon to get rid of the gold chunks from rock bottom of the pan.
5.Add ingredient , chicken broth and bay leaves, bring back a boil.
6.Cover and cook for 10 minutes.
7.Open the pan and add shrimp, nuts, basil and thyme.
8.Boil, open lid, until shrimp are pink and cooked, about 4 minutes. Discard the bay leaves.
9.Season with kosher salt and fresh pepper.
