Nutella Stuffed Cookies

Nutella Stuffed Cookies

Gourmet style Nutella stuffed cookies made with brown butter and dusted with sea salt.

Ingredients

  • 1 medium egg
  • 115 g unsalted butter
  • 1 teaspoon of vanilla
  • 275 g plain flour
  • 1/2 teaspoon of salt
  • 175 g light brown sugar
  • 1 tablespoon of cornstarch
  • 15 tablespoons of Nutella (piled)
  • 1/2 teaspoon of baking soda
  • 200 g finely chopped chocolate

Instructions

First, pour filled teaspoons of Nutella onto a covered tray and freeze until solid. It usually takes 30-60 minutes!

Then, once the Nutella is frozen, prepare your cookie dough!

Preheat your oven to 190C / 170C Fan!

Beat together your butter and sugar until frothy, then add your vanilla and egg and beat again until smooth.

Whisk together your flour, salt, baking soda and cornstarch, then add them to the other mixture.

Add the finely chopped chocolate and mix until well blended.

Scoop up your cookies with a portioned cookie spoon.

As you collect each cookie, flatten the dough slightly into a disc shape, add a piece of frozen Nutella in the middle, then wrap the cookie dough around the Nutella completely so that it is covered!

They'll be Cookie Balls at the end!

Line 2-3 LARGE trays with parchment paper - and add 6 cookies to each tray. Each cookie can spread out a bit during baking, so you want room for it to grow!

Bake for 11 to 13 minutes or until golden brown. The more you cook, the less sticky they will be! Happy Cooking Time.

Notes

Freezing Nutella is important so it's easier to prepare and keep Nutella gooey!

You can make these chocolates flavored by removing 25g of flour and adding 25g of cocoa powder!

These are best fresh so they're still hot and gooey, but will last 3-4 days when prepared - you can easily microwave them to be gooey inside again!

They are not designed to spread as much, but if you want you can flatten them if you can, but since Nutella is frozen, it is more difficult. I leave them as they are.
