GRASSHOPPER PIE
This no-bake mint pie with a homemade chocolate crust is inspired by the grasshopper cocktail, a sweet mint drink after dinner.
Ingredients
- 40 large marshmallows
- 1/4 cup light cocoa cream
- 6 tablespoons of melted butter
- 1/4 cup spearmint cream
- 15.25 oz. Packet of Oreos Mint Cream
- 2 1/3 cups heavy whipping cream, divided
- optional chocolate syrup
Instructions
Firsty, place the Oreos in a food processor and beat until fine crumbs
Then, remove 1/4 cup and set aside
add the remaining crumbs to a medium bowl and toss with the melted butter
pour the breadcrumb mixture into a 9 inch deep pie pan, spread them in an even layer on the bottom
using a large spoon or measuring cup, work the crumbs on the sides of the pie plate to create the crust
put aside
combine marshmallows and 1 cup heavy whipping cream in a large saucepan over medium heat, stirring constantly
once the marshmallows have melted, remove completely from the heat and pour in the crème de cacao and crème de mint. Make sure the creme de mint is mixed well
set marshmallow mixture aside to cool for 10 minutes
while cooling, beat with remaining heavy whipping cream until stiff peaks form
pour a third of the marshmallow mixture over the whipped cream and stir in
repeat two more times until everything is incorporated
pour into the pie crust
top with remaining Oreo crumbs, then place in the freezer, uncovered
after an hour, cover the pie and freeze until solid
remove the pie 10 minutes before serving
sprinkle each slice of chocolate syrup used
