French Yogurt Cake
This French yogurt cake is so easy to make and the result is an incredibly delicious, chewy, light and flavorful bread that is suitable for many occasions.
Ingredients
- 3 large eggs
- 1 cup of sugar
- 1/4 teaspoon vanilla extract
- Grated zest of a lemon
- 1/2 cup plain whole milk yogurt
- 1 1/2 cups all-purpose flour
- 2 teaspoons of baking powder
- pinch of salt
- 1/2 cup unflavored oil (canola, grape seed)
Instructions
First, preheat the oven to 350 ° F. In a large bowl, combine the sugar and lemon zest together, using your fingers to rub the zest into the sugar until the sugar is moist and fragrant. Add the eggs and whisk until pale yellow and clear.
Then, add yogurt and vanilla extract and whisk until blended. Now add the flour, baking powder and salt; whisk until the dough is smooth.
Use a rubber spatula to incorporate the oil into the dough; the cake batter will be shiny once you are done.
Pour batter into greased 1 lb loaf pan and bake cake for about 40 to 50 minutes, until a toothpick inserted in center of cake comes out clean. Return the cake to a wire rack and let cool before serving. Happy Cooking Time.
