CHICKEN WITH BACON MUSTARD SAUCE
A delicious starter, this chicken with bacon and mustard sauce is quite impressive for dinner guests. Serve it with a cornstarch and steamed greens for a delicious meal!
Ingredients
- 1/4 teaspoon of salt
- 1 cup chopped onion
- 1/4 teaspoon paprika
- 1 tablespoon of olive oil
- 1 1/2 cup chicken broth
- 1/8 teaspoon black pepper
- 1/3 cup Dijon mustard
- 8 strips of uncooked bacon, chopped
- 2 lbs boneless, skinless chicken breasts
Instructions
First, combine the Dijon mustard, paprika, salt and pepper in a small bowl, to make a paste. Distribute the batter evenly on both sides of the chicken breasts. Put aside.
Then, in a large skillet, cook the chopped bacon over medium-high heat until just starting to brown. Place on a plate, leaving the bacon fat in a pan. In the same pan, add the chopped onion and cook in the bacon fat until softened. Remove to the same plate, along with the bacon.
Add 1 tablespoon of olive oil to the same hot, now empty pan. Cook chicken breast (with mustard paste on top) over medium heat, about 1.5 minutes per side. The chicken will not be cooked because you will continue to cook it in the next step. Place the chicken on a plate.
In the same pan, add 1 1/2 cups of chicken broth, bring to a boil, scraping the bottom of the pan. Add the bacon and onions, mix well. Return the chicken breast, reduce the heat to low-medium and cook for about 15-20 minutes, turning the chicken once, until the chicken breast is fully cooked and no longer pink in the center.
