 Salmon Pesto Pasta



This salmon pesto paste recipe is quick to organize and makes a chic meal, ideal for a fast weeknight dinner. you'll use the pesto during a jar or make it yourself


INGREDIENTS

1 pound fresh salmon

1 tablespoon of vegetable oil

1 tablespoon butter

Salt and pepper to taste

1/4 teaspoon garlic powder

Dredge flour

1/3 cup chicken broth or dry wine

1/3 cup of pesto (click for my recipe or use your favorite variety during a jar)

1/4 cup cream / light whipping cream

1/2 teaspoon optional juice

Optional fresh grated Parmesan cheese

8 ounces of raw pasta


INSTRUCTIONS

1.Boil a pot of salted water for your pasta and cook hard consistent with the directions on the package.

2.Sprinkle the salmon with garlic powder and a pinch of salt and pepper. Coat all sides with flour.

3.In a skillet, heat the oil and butter over medium-high heat. Cook the salmon for about 3 minutes / side until golden brown.

4.Remove the pan from heat. Remove the salmon to a plate and put aside . Pour the fat from the skillet, but leave a fine piece of gold stuck to rock bottom of the pan (don't wipe it).

5.Add chicken broth and pesto then reheat the pan. Cook for about 30 seconds while scraping chocolate chunks from rock bottom of the pan.

6.Add the cream and juice and let the sauce simmer for a few minute. Put the salmon back in and break it into pieces together with your spoon. Reduce heat and simmer for five minutes approximately (the sauce also will thicken).

7.Drain pasta and blend with sauce. Serve immediately with freshly grated Parmesan, if desired.
