Mediterranean Grilled Chicken Salad
This Mediterranean Herb & Lemon Chicken Salad recipe is as close to perfection as it gets! Full of Mediterranean flavors: olives, tomatoes, cucumber, avocados and chicken for a complete meal in a salad bowl!
Ingredients
- 1 cucumber, diced
- Olive oil for chicken
- 2 avocados, diced
- 1 cup of Feta cheese, cubed (about 8 oz)
- 6 Roma tomatoes, diced
- 2 heads of romaine lettuce, chopped
- 1 cup of artichoke hearts, roughly chopped
- 1/2 cup pitted Kalamata olives, halved
Simple Mediterranean Chicken Marinade
- 3 garlic cloves, minced
- The juice of one lemon
- 1 teaspoon of dried oregano
- 1 tablespoon of olive oil
- 4 chicken breasts, mashed to 1/2 inch thick
- Salt and pepper to taste
Mediterranean dressing
- 2 garlic cloves, minced
- 2/3 cup extra virgin olive oil
- 1 teaspoon of dried oregano
- 1 tablespoon of fresh lemon juice
- 1 tablespoon of crumbled feta
- 3 tablespoons of red wine vinegar
- 1 teaspoon of Dijon mustard
- Salt and pepper to taste
Instructions
First, in a Ziploc bag, add the marinade ingredients and the chicken breast, and marinate for about 15 minutes while you prepare the vegetables. Store in the refrigerator for safety.
Then, meanwhile, combine all the ingredients for the Mediterranean vinaigrette in a mason jar and shake well.
Heat a little olive oil on a grill pan over medium heat. Grill chicken on both sides, about 6-8 minutes per side, until cooked through or until internal temperature reaches 165 degrees F. Transfer to a plate and let stand for 10 minutes . Slice.
Combine all the prepared salad ingredients in a bowl. Top with chicken slices and serve with a Mediterranean dressing. Happy Cooking Time.
