Fried Rice with Bacon


 



Fried Rice with Bacon






A quick and easy dish that can be made with any meat or veg you have on hand. It's the perfect meal to clean the fridge!

INGREDIENTS

  • 1 tablespoon of butter
  • 2 medium carrots, diced
  • 4 large eggs, beaten
  • 4 ounces (125 g) bacon, diced
  • 1 cup thawed frozen peas
  • 2 teaspoons of sesame oil
  • 4 garlic cloves, minced
  • 3 tablespoons of low sodium soy sauce
  • 1 teaspoon of hoisin sauce
  • 4 cups of cooked and chilled rice (white or brown rice)
  • 2 tablespoons peanut oil, divided (or olive oil)
  • 1 onion, diced
  • 1 tablespoon of oyster sauce
  • Sliced green onions for garnish if desired

INSTRUCTIONS

First, fry the bacon in a wok or large skillet over medium-high heat until crispy and golden. Use a slotted spoon to transfer to a plate with paper towels. Put aside.

Then, wipe the pan with a paper towel and heat 1 tablespoon of oil. Add the eggs and scramble until cooked through. Transfer to the plate with the bacon and keep warm.

Heat the remaining oil in the pan. Add the carrots and onion to the pan and cook until tender (about 3-4 minutes). Stir in the garlic and cook for a further minute until fragrant.

Add the rice and cold peas and cook 3-4 minutes until the rice begins to soften.

Return the eggs to the pan. Stir in the soy sauce, oyster sauce, butter, sesame oil and hoisin sauce. Cook 1 to 2 minutes to melt the butter and heat the sauce through the rice.

Garnish with green onions and serve.
