Easy Ham and Bean Soup






This quick and easy ham and bean soup is filled with white beans, smoked ham, carrots and onions. It's ready in just 30 minutes and is a hearty way to use up any leftover holiday ham.

INGREDIENTS

  • 1 bay leaf
  • 2 stalks of celery, sliced
  • salt and pepper to taste
  • 2 teaspoons minced garlic
  • 3 cups diced ham
  • 3 carrots, peeled, halved and sliced
  • 1/4 cup chopped fresh parsley
  • 8 cups low sodium chicken broth
  • 20 ounces of dry bean soup mix
  • 3/4 cup finely diced onion
  • 3 sprigs of fresh thyme or 1 teaspoon of dried thyme
  • 15 ounces of diced tomatoes won't drip

INSTRUCTIONS

First, rinse the beans thoroughly; set aside seasoning packet for later use

Then, place the beans, onion, carrots, celery, garlic, thyme, bay leaf, ham and chicken broth in a slow cooker.

Cook on HIGH 4 hours or on Low for 8 hours or until beans are cooked through.

Stir in tomatoes, sachet of seasoning, and salt and pepper to taste.

Cover and cook for another 20 minutes

Sprinkle with parsley and serve.
