Copycat Firecracker Chicken
If you love Wagamama Firecracker Chicken, you'll love this recipe! This is my copied version of that tasty stir-fry - tender chicken, crunchy veggies, and some HOT peppers in a deliciously good sweet and spicy sauce.
Ingredients
for the chicken:
- 1 large egg
- 1/2 teaspoon of salt
- 1/4 teaspoon black pepper
- 1 lb boneless, skinless chicken breast or thighs
- 3 tablespoons of cornstarch
- 2 tablespoons of olive oil
For the sauce:
- 1/2 cup packed brown sugar
- 1/2 teaspoon of salt
- 1.5 tablespoon of apple cider vinegar
- 1/2 cup hot sauce
- 1/2 teaspoon crushed red pepper flakes optional
Instructions
First, cut the chicken into bite-size pieces. Season with salt and pepper.
Then, in a medium bowl, whisk the egg. Add the cornstarch and whisk until smooth.
Heat the oil in a skillet. Dip each piece of chicken in the cornstarch mixture, then fry them in the pan on both sides. It is not necessary to cook it, just brown it on each side. Repeat with each piece of chicken. It is better to do it in batches.
Place chicken in a 10 "x 7" baking dish.
Preheat the oven to 350 degrees F.
In a medium bowl, whisk together hot sauce, sugar, vinegar and salt.
Pour the sauce over the chicken. Stir gently to make sure each piece is coated with the sauce.
Bake for 30 minutes. The sauce will thicken and become sticky.
Serve the chicken over rice, garnished with chopped green onions and sprinkled with red pepper flakes. Happy Cooking Time.
