 Broccoli Fritters With Cheddar Cheese 



Easy broccoli fritters to form with cheddar and have a warm, flavorful bite! The minimal ingredients keep this recipe healthy and low in carbs.


INGREDIENTS

8 ounces of broccoli, dig small pieces or chopped

1 cup grated cheddar

2 large eggs, beat off

2 tablespoons oat fiber or almond flour, or powdered pork rind (plain flour if not low in carbs)

1 teaspoon of Cajun seasoning

1 tablespoon avocado oil or your favorite


INSTRUCTIONS

Preparation:

1.Cut the crown and stems of fresh broccoli into 1/2 inch by 1/2 inch chunks. Microwave or steam briefly. Drain excess water and dry with paper towels if wet. (If using leftover broccoli, drain well and chop into small pieces.)

Method:

2.Stir or stir the broccoli with the flour of your choice and cajun seasoning to coat. Add eggs and blend . Add the cheddar and blend until well blended.

Cook:

3.Place a forged iron or nonstick skillet over medium heat until hot. Add oil and stir to coat the pan. Non-stick pans require less oil. Visually divide the mixture into quarters and put within the pan, stacking in small mounds or patties. Scrape off all the pieces that fall under the pile.

4.Bake on one side until the cheese on the patty begins to melt and therefore the bottom is crispy, about 2-3 minutes. Turn and cook on the opposite side until golden brown.

5.Produces 4 large loaves of two .8 NC each. Serve, garnished with egg or dipping sauce.
