PINEAPPLE BARS




PINEAPPLE BARS







Easy to make pineapple bars! With just a few ingredients, you can make these bars anytime! Serve with a little coconut and they will quickly become a family favorite!

Ingredients

FOR THE DOUGH

  • 1/2 teaspoon of salt.
  • 1/2 cup granulated sugar.
  • 1 1/2 cups all-purpose flour.
  • 3/4 cup unsalted butter, chilled and cubed.

FOR THE PINEAPPLE FILLING

  • 2 eggs.
  • 1/2 cup sour cream.
  • 1 cup of granulated sugar.
  • 1/2 teaspoon of salt.
  • 1 can 20 ounces of crushed pineapple, lightly drained.
  • 1/3 cup all-purpose flour.

FOR COCONUT MIST

  • 1/4 cup of milk.
  • 1-2 drops of coconut extract (optional).
  • 1 cup of powdered sugar.

Instructions

MAKE THE CRUST

First, preheat your oven to 350 degrees F and spray your 9x13 skillet with non-stick spray.

Then, place your ingredients in a bowl, with your hands or with a blender, mix all your ingredients together until they are crumbly.

Remove 1 cup of the crust mixture and set aside.

Gently press the remaining crust into the bottom of your pan and bake for 10 minutes, take out and let cool completely.

TO MAKE THE PINEAPPLE FILLING

With a hand mixer or stand mixer with a paddle, place all of your ingredients in your bowl and mix until everything is completely incorporated.

Pour your pineapple filling over your crust and sprinkle the remaining crust mixture evenly over the filling.

Bake for 48 to 50 minutes or until the center is no longer moving.

TO MAKE COCONUT MIST

In a small bowl, combine all of your ingredients, mixing thoroughly until smooth, you may need to add more milk to achieve the desired texture.

With a spoon or fork, sprinkle the tops of your bars once they are completely cool.

Notes

Just be aware that when the crust is fully mixed it will still be very thin, it won't be as crumbly as a lot of crust mixes.

You can replace the coconut extract with vanilla extract instead.
