Italian Drunken Noodles


 



Italian Drunken Noodles







Drunk Italian Noodles are a delicious Italian and Thai fusion dish with spicy sausages, peppers, onions and basil, lightly kissed with wine!

Ingredients

  • 1 teaspoon of fresh oregano
  • ½ teaspoon crushed black pepper
  • 4 garlic cloves, minced
  • ½ cup of white wine
  • 1 teaspoon of fresh thyme
  • 1 large onion, thinly sliced and quartered
  • Olive oil
  • 1 teaspoon of fresh rosemary
  • 2 small orange peppers, seeded and thinly sliced
  • 1 teaspoon fresh sage leaves, purchased
  • 8 ounces of noodles, uncooked
  • 2 small red bell peppers, seeded and thinly sliced
  • 4 mild Italian sausages, removed from casings and crumbled
  • 1 ½ teaspoon kosher salt
  • 2 small yellow bell peppers, seeded and thinly sliced
  • 1 can (14.5 ounces) diced tomatoes with juice
  • 2 tbsp. 1 tbsp flat-leaf parsley, chopped
  • ¼ cup fresh basil leaves, diced and divided

Instructions

First, cook the noodles directly in salted boiling water.

Then, place a large non-stick skillet over medium-high heat; add 1 tablespoon of olive oil and the sliced Italian sausage to the pan, letting it brown in the oil for a few moments on each side. Remove and reserve.

Add the chopped onion and let it caramelize and turn golden, about 5 minutes, stirring to keep it from burning (add a little olive oil, if necessary); Once the onion begins to brown, add the salt, fresh herbs and cracked black pepper and stir to combine. Stir in the sliced peppers and sauté them with the onion for about 2 minutes until slightly tender and golden brown.

Then add the garlic, cook for about a minute, add the white wine and let reduce for a few minutes. Stir in the diced tomatoes with their juice, return the sausages to the pot and gently fold in the mixture to combine; simmer gently for about 3-4 minutes for the flavors to blend well.

To finish the sauce, pour in about 2 good tablespoons of olive oil to create a silky flavor. Stir in the chopped parsley and fresh basil, leaving a little basil for garnish.

Drain the noodles well and add them directly to the sauce, using tongs to gently mix and mix. Season with more salt and pepper if needed.

Garnish with more basil and another drizzle of olive oil. Happy Cooking Time.
