FROSTED SUGAR COOKIE BARS







These frosted sugar cookie bars are soft, chewy and topped with creamy vanilla buttercream. And sprinkle… of course!

INGREDIENTS:

FOR BISCUIT BARS

  • 1 egg
  • 1 teaspoon of salt
  • ½ teaspoon of baking soda
  • 2½ cups all-purpose flour
  • 1 teaspoon of baking powder
  • 1½ cup granulated sugar
  • 2 teaspoons of vanilla extract
  • ¾ cup unsalted butter (at room temperature)
  • 4 ounces of cream cheese (at room temperature)  

FOR ICING

  • 1 tablespoon of vanilla extract
  • 2½ cups of powdered sugar
  • 1 cup unsalted butter (at room temperature)
  • Rainbow glitter (for decoration)

DIRECTIONS:

Make Cookie Bars 

First, preheat oven to 350 degrees F. Grease 9x13 inch pan or line with parchment paper; put aside.

Then, in a medium bowl, whisk together flour, baking powder, baking soda and salt; put aside.

Using an electric mixer, beat together butter and cream cheese on medium speed until smooth, about 1 minute. Add the sugar and continue beating until light and fluffy, about 3 minutes. Add the egg and vanilla extract and beat to combine, about 1 minute. Reduce mixer speed to low and gradually add flour mixture, stirring only until just combined. Use a rubber spatula to finish mixing, making sure that no pockets of flour remain.

Using a spatula, spread the dough in an even layer in the prepared pan (the dough will be thick!). Bake until lightly browned and a toothpick inserted in the center comes out clean, 20 to 25 minutes. Place the pan on a wire rack to cool completely before frosting.

Prepare the vanilla frosting 

Using the whisk of your stand mixer, whip the butter on medium-high speed for 5 minutes, stopping to scrape the bowl once or twice. Reduce the speed to low and gradually add the powdered sugar. Once all of the powdered sugar is incorporated, increase the speed to medium-high and add the vanilla, stirring until incorporated. Whisk on medium-high speed until light and fluffy, about 2 minutes, scraping the bowl as needed.

Spread frosting over cookie bars and decorate with sprinkles, if desired. Cut the bars into squares and serve. Cookie bars should be stored in an airtight container at room temperature for up to 3 days (you can keep them in the refrigerator for up to 1 week). Happy Cooking Time.
