Crispy Baked Tofu Nuggets







Stuff these crispy baked tofu nuggets in a sandwich, stack them on top of your favorite salad, or dip them in your favorite sauce. These versatile little bites are delicious as you eat them and super easy to prepare!

Ingredients

  • ½ cup all-purpose flour
  • ¼ cup non-dairy, unsweetened milk
  • 2 cups panko breadcrumbs, more if needed
  • 1 block of 14 oz extra firm tofu, drained and pressed (* see note)
  • 1 teaspoon granulated onion, divided
  • 1 teaspoon of sea salt, divided. More to taste
  • ⅓ cup of water, more if needed
  • 1 teaspoon granulated garlic, divided
  • Cooking oil spray (* optional)

Instructions

First, preheat the oven to 450 ° F (230 ° C). Line a large rimmed baking sheet with parchment paper. Put aside.

Then, in a large rimmed plate (or bowl), add breadcrumbs and ½ teaspoon of garlic, onion and salt. Mix well and set aside.

Cut the tofu in half lengthwise, then cut each half into 6 equal-sized squares. You should have a total of 12 squares.

In a large bowl, whisk together the flour and remaining garlic, onion and salt. Now pour in the milk and water and whisk to mix well. The dough should be thick, but still pourable. If it is too thick, add a few splashes of water.

Dip a piece of tofu in the dough and coat it well. Lightly shake the excess batter and place it in the breadcrumbs. Gently roll to coat well and place on a baking sheet, leaving room between each piece. * Optional: Spray on oil for extra gold nuggets. Bake for 20 minutes or until they are golden brown and crispy. Flip the pieces halfway and spray again with oil if desired.

Serve immediately with the sauces of your choice. Happy Cooking Time.

Notes

* PRESSING TOFU: wrap a block of tofu in a few paper towels and place it on a rimmed plate. Add a cast iron skillet on top (or something equally heavy) and let drain for at least 30 minutes. When finished, pat dry to remove excess moisture from the surface. You can also use a tofu press to make it even easier or you can buy pre-pressed tofu.

* Preparation time does not include pressing the tofu.
