Creamy Chicken Florentine
This creamy Florentine chicken is quick and easy to prepare. It's a creamy blend of cut chicken, spinach and Parmesan cheese.
Ingredients
- 1 teaspoon of butter
- 1 teaspoon of salt
- 1 teaspoon minced garlic
- ¾ cup heavy cream
- 1 teaspoon of olive oil
- 3 cups lightly packed baby spinach
- 4 chicken breasts
- 1 teaspoon of ground pepper
- ¼ cup white wine (or chicken broth)
- ½ cup of cream cheese
Instructions
First, season the chicken breasts with salt and pepper on both sides.
Then, heat olive oil and butter in a large skillet over medium-high heat and add the chicken breasts. Cook the breasts, 4 to 5 minutes per side, until cooked through and lightly browned. Remove the chicken to a plate.
In the same pan, add the garlic and sauté for a minute until fragrant. Add the white wine to the pan and simmer and reduce for a few minutes. Stir the wine so that the pieces stuck to the bottom of the pan come off.
Add the spinach and cook until wilted, stirring occasionally. It will take about two minutes. Once the spinach is wilted, add the cream cheese and heavy cream. Simmer gently, making sure the cream cheese has melted completely and is well mixed.
Return the chicken breasts to the pan, pour in the sauce and simmer for a minute or two before turning off the heat. Serve hot.
