Coffee Cake Banana Bread







Two favorite breakfasts in one ... Banana Bread and Coffee Cake. This cake is soft, tasty and delicious! A fun version of the coffee cake!

Ingredients

Bread

  • 2 eggs
  • 1 1/2 teaspoon vanilla extract
  • 1 cup of sugar
  • 2 tablespoons of brown sugar
  • 1/4 teaspoon of salt
  • 1/2 cup butter, softened
  • 2 cups all-purpose flour
  • 3-4 medium or large bananas
  • 3/4 teaspoon ground cinnamon
  • 1 teaspoon of baking soda
  • 2 tablespoons sour cream or Greek yogurt

Crumb garnish

  • 1 cup of flour
  • 1 cup of brown sugar
  • 1 teaspoon of cinnamon
  • 6 tablespoons of cold butter

Instructions

First, preheat the oven to 350. Grease two 8x4 molds.

Then, in a small bowl, mash the bananas, brown sugar, vanilla extract and ground cinnamon.

In a large bowl, cream the butter and sugar together until light and fluffy.

Add eggs and beat until blended.

For wet ingredients, sift flour, baking soda and salt.

Stir until combined. Add sour cream and stir.

Pour in the mashed bananas and mix until well blended.

Crumb garnish

Combine cinnamon, flour and brown sugar. Cut the butter with a cookie cutter and mix until the filling looks like large crumbs. Sprinkle coating evenly over dough in both pans.

Bake for about 35 to 40 minutes or until the toothpick comes out clean with just a few moist crumbs stuck on it.

Let cool for 10 minutes. Switch to a wire cooling rack.
