Loaded Potato Meatloaf Casserole
Potato Meatloaf Casserole is an easy ground beef casserole recipe filled with mashed potatoes, bacon, and cheese.
Ingredients
- 1/3 cup whole milk
- 1/2 teaspoon kosher salt
- 1/4 yellow onion, finely chopped
- 1/3 cup unsalted butter
- 1/2 cup whole milk
- 1 large egg, lightly beaten
- 1 teaspoon of kosher salt
- 2/3 cup seasoned dry breadcrumbs
- 1 cup grated cheddar cheese
- 1 1/2 pounds of ground beef, (85/15)
- 1/4 teaspoon coarsely ground black pepper
- 2 pounds of potatoes, peeled and cut into 1 "pieces
- 1/4 teaspoon coarsely ground black pepper
- 1/2 cup bacon pieces, cooked and crumbled
Instructions
First, preheat the oven to 375 degrees.
Then, in a large bowl, gently combine the beef, onion, breadcrumbs, milk, egg, salt and pepper then press into a 9x9 baking dish.
Bake uncovered for 15 minutes, then remove and drain off any excess fat.
Set the oven temperature to broil and place the oven rack 6 to 8 inches from the heat source.
While the meatloaf is cooking, add the potatoes with just enough water to cover them in a saucepan and bring to a boil over high heat. Cook for 15 minutes.
Drain the water and add the milk, butter, salt and pepper, mashing everything until creamy.
Spread over the meatloaf and top with cheese and bacon.
Bake for another 15 minutes, until the bacon sizzles and the cheese is bubbling and the mashed potatoes are slightly crispy.
