Easy Tomato Soup with Bacon


Easy to serve bacon tomato soup. i really like the mixture of smoked bacon and sharp, tangy tomatoes in my classic macaroni and tomatoes, my hot tomatoes and bacon pasta, and my tomatoes and rice, so when I'm trying to find a fun thanks to boost tomato soup, i'm going straight for bacon!

INGREDIENTS
6 pieces of bacon, roughly chopped
1 yellow onion, finely diced
3 garlic cloves, chopped
3 tablespoons all-purpose flour
3 cups unsalted chicken broth
2 (28 ounce) cans of mashed tomatoes
1/2 teaspoon sugar
salt
pepper
grated parmesan cheese for garnish (optional)

INSTRUCTIONS
1.In a large casserole pan over medium-high heat, cook the bacon until it's crispy. Use a slotted spoon to scoop the bacon strips onto a plate lined with paper towels to dry, leaving the bacon grease within the pan.

2.Carefully sprinkle about 4 tablespoons of bacon fat and return the skillet to medium heat. Add chopped onions and cook, 5 to eight minutes or until tender and clear. Add garlic and cook for 1 minuteAdd flour and stir to combine . Cook, stirring constantly, for about 3 minutes. Add chicken broth and beat until combined. Add tomato and sugar *. Add the salt and paper sufficiently. Bring it to a boil. Bring it to a boil and cook uncovered for 20 to half-hour .

3.Use the immersion blender carefully to puree the soup until it's smooth, ensuring the top of the blender is on the brink of rock bottom of the pan so it doesn't splash. Adjust the seasonings consistent with taste. Serve with crunchy bacon strips and a pinch of grated Parmesan.
