American Chop Suey

American Chop Suey

American Chop Suey is a classic New England comfort food (with a distinct Italian influence) and it has universal appeal for children and adults!

INGREDIENTS

  • 3 cups of water
  • 3 cloves of garlic
  • 2 teaspoons of basil
  • 3 bay leaves
  • Salt
  • 30 oz of tomato sauce
  • Pepper
  • 30 oz canned diced tomatoes
  • 2 cups uncooked macaroni
  • 1 chopped green pepper
  • 2 pounds of ground beef
  • 2 yellow onions, chopped
  • 2 teaspoons of oregano
  • 1 tablespoon of Worcestershire sauce

INSTRUCTIONS

First, using a large saucepan or Dutch oven, cook the ground beef over medium-high heat until cooked through. Break into smaller pieces and remove any excess fat.

Then, stir in onion, green pepper and garlic. Cook until softened.

Stir in the water, tomato sauce and canned diced tomatoes. Stir in the oregano, basil, bay leaves, Worcestershire sauce and season with S&P to taste. Reduce to a boil and cook, covered, for 20 minutes.

Add the uncooked and cooked macaroni, covered for 15 to 20 minutes, stirring occasionally. Happy Cooking Time.
