Spanish Quinoa
This Spanish Quinoa Pan is the perfect healthy side dish that's full of all your favorite flavors and easy to make in one pan in just 20 minutes!
Ingredients
- 1 cup quinoa
- 1/4 cup chopped white onion
- 2 cups vegetable broth
- 1 teaspoon olive oil
- 1/2 cup chunky salsa
Instructions
First, heat the oil in a small saucepan. Add the onion and sauté until tender and golden.
Then, add the quinoa, salsa and broth and stir to combine. Bring the mixture to a boil, cover and simmer for 20 minutes.
Remove from heat, swell and let stand 5 minutes, then serve.
