PESTO SHRIMP MUSHROOM PASTA







Perfect for busy weeknights, family dinners, or even romantic evenings, this Pesto Shrimp Pasta comes together quickly and is sure to become a favorite! Easy one-pot pasta dish that's ready in about 20 minutes!

Ingredients

  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/2 cup chicken broth
  • 8 oz spiral pasta
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup basil pesto
  • 1 tablespoon olive oil
  • 1 pound shrimp large, peeled, deveined
  • 8 ounces white mushrooms sliced
  • chopped fresh basil

Instructions

First, heat a large skillet over medium-high heat until heated through. Add olive oil - it should flow without sizzling. Add the shrimp, season the shrimp with 1/4 teaspoon of salt and 1/4 teaspoon of red pepper flakes, cook for about 3 minutes, turning them once halfway through cooking, until the shrimp are pink and well cooked. Remove the shrimp from the pan.

Then, add another tablespoon of olive oil to the same pan, now empty. Add the sliced mushrooms. Season the mushrooms with 1/4 teaspoon of salt. Cook, stirring, until the mushrooms release liquid and reduce in volume and soften, about a minute or two. Return the cooked shrimp. Add 1/2 cup of basil pesto and 1/2 cup of chicken broth. Over medium heat, toss to combine. Remove from fire.

Cook pasta according to package directions. Drain. Add to the shrimp with the sauce. Garnish with chopped fresh basil. Happy Cooking Time.
