Chicken Olivia Recipe








Chicken olivia simplified using roast chicken. It's a really creamy dish with a lot of flavor. Perfect served over cooked rice or pasta. This is a really quick and easy dinner recipe.

Ingredients

  • 2 cups sour cream
  • 7 ounce can green chilies
  • 3 cups rotisserie chicken
  • salt and pepper to taste
  • 1/2 cup chopped black olives
  • 1/4 cup chopped green onions
  • 2 10.05 cans cream of chicken soup
  • 1 1/2 cups grated sharp cheddar cheese
  • Enough cooked rice to serve with the dinner for each person

Instructions

First, remove the meat from the roast chicken (white and dark meat) and shred it. Place it at the bottom of a 9x13 baking dish.

Then, in a large bowl, combine the two cans of cream of chicken, sour cream, black olives, peppers and green onions. Add salt and pepper to taste.

Pour the mixture over the grated chicken in the pan. Sprinkle grated cheese evenly on top. Cover the pan with foil, bake at 350 degrees for 30 minutes. After 30 minutes, remove the foil and return the pan to the oven until the cheese is melted and bubbly. Serve over rice.
