BACON CHEESEBURGER CAULIFLOWER CASSEROLE










The Bacon Cauliflower Cheeseburger Casserole is one of my favorite low-carb dinner recipes! A healthy cauliflower casserole dish with a delicious bacon cheeseburger filling that everyone, including the kids, will love!

Ingredients

  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1 head cauliflower {about 6 cups florets)
  • 1 teaspoon oregano
  • 1/2 teaspoon pepper
  • 1 onion; finely diced
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 cup cheddar; shredded and divided
  • 6 strips bacon; finely diced
  • 1 1/2 pounds ground beef or turkey (I used beef)
  • pickle relish

Sauce

  • 1/2 teaspoon salt
  • 1 tablespoon flour
  • 2 tablespoons yellow mustard
  • 1 tablespoon butter
  • 1 1/2 cups heavy cream
  • 1 cup cheddar cheese; shredded

Instructions

First, preheat the oven to 350 degrees F.

Then, steam the cauliflower until tender with a fork. Mix in a food processor until it resembles rice or use a potato masher to reduce into small pieces. Spread out on a plate and let cool. Once cooled, stir in the flour and salt.

Fry the bacon in a large skillet until lightly browned but not crisp. Remove the bacon and keep the cooking juices in the pan.

Add the ground beef or turkey, oregano, garlic powder, salt and pepper to the same pan and sauté until browned and caramelized in spots for optimal flavor. Reserve in a bowl.

Sauté the onion in a drizzle of oil until translucent. Add to the meat and set aside.

In the same pan, melt the butter then add the flour over low heat. Cook 3-4 minutes until the raw flavor of the flour is cooked. Add the heavy cream, mustard, 1/2 teaspoon of salt and continue cooking until the sauce thickens.

Place 1/2 cup of the sauce in the bottom of a 9 × 13-inch baking dish. Layer cauliflower, 1/2 cup grated cheddar cheese and meat. Layer half of the remaining sauce, 1/2 cup of cheese and the rest of the sauce. Sprinkle bacon on top.

Cover the dish and cook for 30 minutes. Uncover and cook for another 10 minutes.

Let cool 15 to 20 minutes before serving topped with pickle relish.
