Roasted Chicken Thighs








Roasted Chicken Thighs








One of my favorite chicken recipes! You get a perfectly tender chicken with a crisp, golden brown crisp skin infused with the flavor of fresh herbs. And it is served on a cover of lemon breaded sauce and paired with an abundance of roasted garlic cloves. This is how you make chicken dinners!

Ingredients

  • 2 tbsp butter
  • Salt and pepper
  • ½ cup white wine
  • 1 medium onion diced
  • 3-4 thyme sprigs (leaves only)
  • 1 cup chicken stock
  • 3 garlic cloves chopped
  • Salt and pepper to taste
  • ½ cup heavy cream
  • 3 lbs chicken thighs bone-in, skin-on
  • 1 tbsp olive oil
  • Italian seasoning (divided)
  • 1 tbsp flour for thickening the sauce

Instructions

First, preheat the oven to 400 F.

Then, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt, pepper and Italian seasoning.

Cook the chicken thighs on the skin medium high first to brown them for 4 to 5 minutes. Flip and cook on the next side for about 4 minutes, for a total of 8 to 10 minutes. Remove the chicken from the pan.

Add 2 tsp. Tablespoon butter, onion and sauté until onion is golden, 3-4 minutes. Add the chopped garlic, thyme and 1 tsp. 1 tsp Italian seasoning and cook another minute.

Then add 1 tablespoon of flour and cook it in the pan oil for only a minute, until it is no longer white. 
Slowly add the wine to the hot pan, increasing the heat to medium to high and cook for a few minutes.

Now add the chicken broth and heavy cream. Stir to combine and cook everything until it decreases slightly, about 5 minutes.

Make sure to taste the sauce and add salt and pepper, to taste.

Return the chicken legs to the pan with the sauce.

Place in the oven uncovered and bake at 400 ° C for 35 minutes.

When the time is up, remove the pan from the oven, check if the chicken thighs are well cooked. 
Sprinkle with fresh thyme and serve with roasted vegetables, mashed potatoes or rice.
