LEMON DELICIOUS PUDDING







LEMON DELICIOUS PUDDING








This delicious tangy dessert is best served shortly after cooking.

Ingredients

  • 4 separate eggs
  • 125 g butter at room temperature
  • 1 cup (220 g) caster sugar
  • 75 g (1/2 cup) plain flour
  • 80 g (1/3 cup) lemon juice
  • 1 1/4 cups (310 g) whole milk
  • grated lemon zest
  • icing sugar, cream or ice, to serve

Instructions

First, preheat the oven to 170 degrees Celsius (forced by a fan). Grease a pan / baking dish and set aside (minimum capacity of 2 liters / 8 cups).

Then, beat the powdered sugar, butter and grated lemon zest until they are pale and creamy.

Beat the egg yolks one by one.

Add the lemon juice, plain flour and whole milk to the cream. Put aside.

Beat the egg whites until stiff peaks form. Slowly mix through the lemon mixture with a spoon.

Pour into the pan / prepared baking dish. Place the dish in a large saucepan and half fill on the side with boiling water (to create a double boiler around the baking dish).

Bake for 30 minutes or until lightly browned and firm on top and a sauce has formed below (it should be shaky at the bottom).

Serve hot with icing sugar, cream or ice.
