Spinach Feta Pinwheels







The spinach and Feta mills made from puff pastry and fresh spinach are perfect for easy snacks or an aperitif for the holidays. These vegetarian spinach and feta rolls are always a hit with children and adults.

Ingredients

  • 1/2 teaspoon garlic salt
  • 1 green onion, chopped
  • A few grates of fresh nutmeg
  • 1 puff pastry sheet, defrosted
  • 1/2 cup crumbled feta (buy a block and crumble it yourself
  • 1 egg whisked with 1 tablespoon of water
  • 1/4 cup grated mozzarella
  • 1 10-ounce package of frozen chopped spinach, defrosted and squeezed dry

Instructions

First, whisk together the egg and water, set aside.

Then, combine cheeses, onion and seasonings. Put aside.

Roll out the puff pastry on a lightly floured surface to flatten the seams. Brush the surface with your egg.

Top the surface with the cheese mixture, then break up the spinach and distribute evenly over the surface. *** Leave about an inch without trim on one of the short sides. ***

Starting with the small side covered with filling, roll up the dough like a jelly.

Line two baking sheets with parchment. Cut the roll into ½-3/4 inch slices and place them on the prepared leaves. Put them in the fridge or freezer to let them cool while the oven preheats to 400 degrees.

Bake for 15 minutes or until golden.
