MINI BROWNIE BITES








These Mini Brownie Bites are so cute and taste fantastic! I bet you can't eat just one! Great chocolate flavor.

Ingredients

  • ¼ teaspoon baking soda
  • 3 Tablespoons/21g coconut flour
  • 1 Tablespoon/15g coconut oil
  • 1 teaspoon vanilla extract
  • ¼ cup + 2 Tablespoons/72g coconut sugar
  • 2 Tablespoons/30g creamy almond butter
  • Pinch of fine seas salt
  • 4oz/120g semi-sweet mini chips , divided use
  • 3 Tablespoons/45g unsweetened applesauce
  • 3 Tablespoon/15g cocoa powder

Instructions

First, preheat the oven to 350 ° F. Grease a mini muffin pan with coconut oil.

Then, combine 3 ounces of mini chocolate chips and coconut oil in a large heat-resistant bowl placed on a small saucepan of simmering water. Stir until the chocolate is melted.

Remove from heat and stir in applesauce, coconut sugar, vanilla extract, a pinch of salt, cocoa powder and baking soda. Add the coconut flour and almond butter and beat until well incorporated (the dough will be thick). Let the dough rest for 10 minutes.

Stir in the remaining 1 oz of chocolate chips. Using a small cookie dough spoon, pour the brownie batter into the muffin pan. Bake 10 to 12 minutes, or until edges are set and puffed up in the center.

Let the brownies cool for 20 minutes in the pan (the brownies will firm up as they cool), then turn out onto a wire rack. Store in brownies at room temperature in an airtight container.
