GLAZED FRESH STRAWBERRY FRITTERS








These strawberry glazed donuts have a crisp and crispy exterior covered with frosting with lots of pieces of fresh strawberries. They are by far one of the most delicious ways to eat fresh strawberries.

Ingredients:

  • ¾ cup milk
  • ½ cup sugar
  • ½ teaspoon salt
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ teaspoon cinnamon
  • 3 tablespoons butter, melted
  • 1 cup fresh strawberries, chopped
  • 2 cups flour
  • 2½ teaspoons baking powder
  • Oil, for frying

For the Glaze:

  • 5 tablespoons milk
  • 3 cups powdered sugar

INSTRUCTIONS

First, mix all the dry ingredients: flour, sugar, baking powder, salt and cinnamon.

Then, whisk eggs until pale in color, about 1 minute. Then add all the liquid ingredients, vanilla, milk and melted butter.

Add the dry ingredients to the wet ingredients and mix gently together. You don't want to mix the dough too much, if there are small pieces in the dough that are good. Add the strawberries and fold them gently into the dough.

Heat the oil in a deep fryer or in a large deep pan to 375 degrees F. I used a simple kitchen thermometer. You can also test the oil by dropping a little paste in the oil, if it boils, rises and takes a golden color, your oil is hot enough.

Add spoonfuls of dough to the oil, the smaller and better they are, the less they will be cooked inside. 
Once the bottom is golden in color, carefully turn the donuts over and fry until both sides are golden brown in color. Place them on a paper towel to absorb the extra oil.

Once all of the dough is fried, mix the frosting ingredients. Add four tablespoons of milk first, then continue adding milk one tablespoon at a time until the frosting is slightly stiff and a bit runny, you don't want the frosting to be too runny or the donuts will be soggy, not crisp.

Dip each donut in the frosting and place it on a wire rack or baking pan to cure the frosting. Happy Cooking Time.
