Classic Pecan Pie Bars
Pecan pie in a small bar, perfect for a crowd! These pecan pie bars boast a soft shortbread crust and all the flavor of pecan pie.
Ingredients
For the shortbread crust:
- ¼ cup sugar
- 1 cup all-purpose flour
- 1 stick 1/2 cup salted butter, melted
- 1 tsp vanilla extract
For the filling:
- 2 eggs
- 1 cup light corn syrup
- ¼ cup all-purpose flour
- 1 ½ cup chopped pecans
- ½ cup packed brown sugar
Instructions
First, preheat the oven to 300 degrees F. Line the bottom of an 8x8 pan with parchment paper. In a small bowl, combine the butter, sugar, vanilla and flour until you get a thick, sticky dough.
Then, press into the bottom of the prepared baking dish in a single thin layer and bake at 300 degrees F for 10 to 15 minutes.
In a large bowl, combine eggs, brown sugar, corn syrup and flour until well blended. Stir in the chopped pecans.
When the shortbread layer is finished, remove from the oven and pour over your pecan mixture.
Increase the oven temperature to 350 degrees and bake again for 25-30 minutes or until the top is golden and crisp.
Take it out and let it COMPLETELY cool. These are easier to cut if you put them in the refrigerator and cool them. It also helps the filling to complete the configuration.
Then cut into squares and serve!
