ZUCCHINI PARMESAN CRISPS







These 2 zucchini parmesan chips couldn't be easier. They are crisp, tasty and make a great snack or side dish.

INGREDIENTS:

  • 2 large eggs, beaten
  • 1 cup Panko
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 2 zucchinis, thinly sliced to 1/4-inch thick rounds

DIRECTIONS:

First, heat the vegetable oil in a large skillet over medium-high heat.
In a large bowl, combine the panko and parmesan; put aside.

Then, work in batches, dredge the zucchini rings in the flour, dip in the eggs, then dredge in the Panko mixture, pressing to coat.

Add the zucchini rings to the pan, 5 or 6 at a time, and cook until they are evenly browned and crisp, about 1 minute per side. Transfer to a plate covered with absorbent paper.
