Oat Fudge Bars







Oat Fudge Bars








Oatmeal Fudge Bars - Oatmeal cookie bars topped with a layer of rich chocolate fudge, then more oatmeal cookies.

Ingredients

  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 cup white granulated sugar
  • 3 cups large flake old fashioned oats
  • 1 teaspoon vanilla extract
  • 1 cup packed brown sugar
  • 1 tablespoon butter
  • 3/4 teaspoon fine grain sea salt
  • 12 oz bag semi-sweet chocolate chips
  • 1 cup butter softened
  • 2 cups oat flour alternately use all-purpose flour
  • 300 ml can Eagle Brand Sweetened condensed milk

Instructions

First, preheat the oven to 350 degrees.

Then, line an 8x12 baking dish with parchment paper
In a large bowl or in the bowl of a stand mixer, add the butter and sugar and beat together at medium speed until smooth and creamy. Add eggs and beat until light and fluffy.

In a medium bowl, combine the oats and oatmeal, baking soda and salt.

Add the oat mixture to the butter and egg mixture and beat until everything is well mixed and it has formed a sticky paste.

Reserve 1/3 of the dough and set aside. Press the remaining dough into the bottom of the baking dish. Moisten your hands with a little water to help squeeze the dough flat into the baking dish. It's sticky dough. Press lightly on the dough on the sides of the dish to make a little crest to catch the fudge filling

To make the fondant: 

First, in a small saucepan, combine the Eagle Brand condensed milk and the chocolate chips over medium-low heat. Stir until the chocolate chips have melted and the mixture is smooth and creamy. 
Remove from heat and stir in the tablespoon of butter and vanilla.

Then, distribute the fudge evenly over the top of the dough in the baking dish. Try to leave about half an inch on the sides.

Take small tufts of dough previously set aside and press on flat shapes and place them on the fondant. Don't worry about covering the top, you want to see a little fudge going through.

Bake at 350 for 20-22 minutes. The oats on top should be lightly golden.

Remove from oven and let cool before cutting into squares.
