Carrot and Walnut Loaf








A soft and deep cake with carrots and nuts at each bite. A simple dusting of powdered sugar tops this comforting carrot and nut cake.

INGREDIENTS

  • 1/4 cup Butter
  • 1/4 cup Orange Juice
  • 1/4 cup Maple Syrup
  • 1/2 cup chopped walnuts
  • 2 Eggs, slightly beaten
  • 1 teaspoon Cinnamon
  • 1 1/2 cups Whole wheat flour
  • 1/4 cup warm Water
  • 1 teaspoon Vanilla Extract
  • 1 cup grated Carrots
  • 1 1/4 teaspoon Baking powder

INSTRUCTIONS

First, preheat the oven to 370F / 170C. Line a baking dish with parchment paper.

Then, in a large bowl: mix the flour, baking soda, cinnamon, nuts

On the stove: lightly melt the butter, maple syrup, orange juice, vanilla. Not too hot.

Combine all ingredients and stir until just combined. Add water if necessary to soften the mixture.

Cook 40 to 45 minutes until golden brown and it comes back to the touch. Let cool on a metal plate and serve.

Refrigerate or freeze.
