Beef and Macaroni Soup
Making hamburger soup with macaroni turns your normal hamburger soup into a complete meal! Although I like a good basic hamburger soup, I have found that kids love it even more with macaroni.
Ingredients
- 6 cups beef broth
- 1/2 teaspoon oregano
- 1/2 cup onion diced
- 14 oz diced tomatoes
- 1/2 teaspoon dried basil
- 1 1/2 cups frozen mixed vegetables
- 1 lb lean ground beef
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 1/2 cups elbow macaroni uncooked
Instructions
First, in a large pot, brown beef and onion until there is no pink left. Drain the fat.
Then, add broth, tomatoes, tomato paste, Worcestershire sauce and seasonings. Bring to a boil. Simmer for 5 minutes.
Add the noodles and vegetables to the macaroni, simmer for another 8 minutes or until the macaroni is tender. Season with salt and pepper to taste.
Serve with grated cheese if desired. Happy Cooking Time.
