Sweet potato muffins
Muffins keep
for days without losing flavor while retaining their moisture. You can replace
the cashews with pecans or sprinkle with cinnamon / sugar on top.
Ingredients
- 2 eggs
- ½ tsp salt
- ½ cup cooking oil
- 1 ½ cups flour
- ¼ tsp cloves
- 1 tsp baking powder
- ¾ cups sugar
- 1 cup sweet potato, mashed or pureed
- 1 ½ tsp cinnamon
- ½ tsp ground cardamom
- 1 cup golden raisins, optional
- 1 tsp baking soda
- 1 tsp allspice
- 1 tsp ground ginger
Instructions
First, in a
large bowl, combine the sugar, eggs, cooking oil and sweet potato.
Then, sift
together the flour, salt, baking powder and all the spices and add to the sweet
potato mixture.
Finally,
stir in the raisins, if you are using them.
Place the
dough in 12 greased or paper-lined muffin cups.
Bake at 350
degrees F for about 20-25 minutes or until a toothpick inserted
in the center
