Strawberry Buttermilk Donuts







Strawberry Buttermilk Donuts









These buttermilk and strawberry donuts are the perfect light recipe for breakfast or a snack for this holiday season! They are super easy and full of flavor!

INGREDIENTS

  • 2 large eggs
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1/4 teaspoon nutmeg
  • 1 tablespoon vanilla
  • 4 tablespoons butter, melted
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 tablespoons strawberry jam (or Smucker's Simply Fruit Strawberry Spread)
  • 1 cup fresh strawberries, diced very small

Glaze:

  • 1 tablespoon heavy whipping cream
  • 2 1/2 cups powdered sugar
  • 1/2 cup fresh strawberries, diced very small
  • 1 tablespoon strawberry jam or fruit spread

INSTRUCTIONS

First, preheat the oven to 425 degrees. Lightly grease the donut molds with a non-stick cooking spray (I used 2 Wilton donut molds each containing 6 donuts)

Then, in a large bowl, combine the flour, sugar, baking powder, salt and nutmeg. Mix until homogeneous.

In another bowl, combine the melted butter, eggs, buttermilk, vanilla and strawberry jam.

Add the wet ingredients with the dry ingredients. Mix until homogeneous, then incorporate the diced strawberries. Carefully pour the mixture into donut molds, filling 3/4.

Bake for 7 to 9 minutes or until an inserted toothpick comes out clean.

Let cool on rack. Then frost while the donuts cool.
Icing:

Mix strawberries, whipping cream and jam until well blended. Then add the powdered sugar and beat until smooth. Add more powdered sugar if you need to further thicken the frosting. You can sprinkle the frosting on the donuts or dip them in the frosting. We still had some glaze, so we soaked it a second time after the first layer of glaze put in for a few minutes.
