PISTACHIO BRITTLE








This Pistachio Brittle is sprinkled with pistachios, fructose-free and rich in protein powder proteins.

INGREDIENTS:

  • 1cup water
  • ½ teaspoon kosher salt
  • ½ cup light corn syrup
  • ½teaspoon baking soda
  • 2 cupsgranulated sugar
  • 2 tablespoons unsalted butter
  • 3cupsroasted, salted pistachios ((16 ounces))

DIRECTIONS:

First, line a baking sheet lined with parchment paper and lightly coat with cooking spray; put aside.

Then, in a medium saucepan, combine the sugar, water, corn syrup and salt. Bring to a rapid boil over medium-high heat and cook until golden, about 20 to 25 minutes. Remove from fire. Stir in butter, baking soda and pistachios (mixture will foam). Continue to stir until the mixture no longer boils and the caramel is smooth, about 1 minute.

Transfer to the prepared baking sheet and spread with a rubber spatula sprayed with a non-stick coating. Let cool until firm, about 15 minutes. Break into pieces. The fragile can be stored in an airtight container at room temperature for up to 3 weeks.
