Homemade Chicken Pasta Soup
This delicious homemade chicken pasta soup tastes like you've been spending the whole day in the kitchen, but in reality you can put it together, start finishing in under an hour! It's also fabulous with leftover turkey!
Ingredients
- 2 carrots sliced
- 2 cloves garlic minced
- 1 teaspoon kosher salt
- 1/2 yellow onion chopped
- 4 cups chicken broth
- 2 stalks celery sliced thinly
- 1 teaspoon fresh thyme
- 2 chicken breasts boneless skinless
- 2 tablespoon unsalted butter
- 1/2 teaspoon coarse ground black pepper
- 8 ounces egg noodles cooked 1 minute shy of directions
Instructions
First, add the butter to a large Dutch oven over medium heat and cook the onions, garlic, celery, salt and pepper for 3-4 minutes or until they are translucent before adding the broth, chicken, carrots and thyme and bring to a boil, then reduce to a boil for 20 minutes.
Then, remove the chicken and grate with two forks before returning to the soup with the cooked pasta and serve. Happy Cooking Time.
