Orange Juice Cake








Orange Juice Cake








The original recipe for the orange juice cake was shared with her many years ago. I have made some minor changes to the recipe over the years, but it remains one of my favorite cakes.

Ingredients

  • 4 eggs
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 3 cups (360 grams) all-purpose flour
  • 1 tbsp orange zest
  • 3 tsp baking powder
  • 1 1/2 cups (340 grams) granulated sugar
  • 1 cup (235 ml) vegetable oil
  • 1/2 cup (120 ml) orange juice

Instructions

First, in a mixing bowl, whisk sugar with vegetable oil and eggs. Stir in the vanilla extract.

Then, add the flour, baking powder and salt. Add the orange zest and whisk the dough until everything is just combined.

Add the orange juice and quickly prepare the dough.

Pour the batter into a prepared cake pan and bake at 356f (180c) for 50 minutes or until a toothpick comes out clean.
