Italian Tomato Salad







Italian Tomato Salad







Italian tomato salad with red onions, herbs and capers in a red wine vinegar vinaigrette.

Ingredients

  • 1⁄2 tsp fine sea salt
  • 1⁄2 tbsp lemon juice
  • 4 tbsp olive oil
  • 1 tbsp diced fresh parsley
  • 3 tbsp minced Red Onion
  • 1 clove garlic crushed
  • 2 tbsp red wine vinegar
  • 4 large leaves fresh basil finely diced
  • 3 Beefsteak tomatoes sliced 1/3" thick
  • fresh ground pepper

Instructions

First, cut the tomatoes into slices about 1/3 inch thick and arrange them on a platter with a rim in a single layer.

Then, whisk together the olive oil, red wine vinegar, lemon juice, chopped red onion, diced basil and parsley, crushed garlic and sea salt to make the marinade.

Pour the marinade evenly over the tomatoes, making sure they are all covered with the marinade and the herbs and onion are spread over the top of the tomatoes.

Place the dish in the refrigerator and let stand at least an hour for the tomatoes to absorb the marinade.

Garnish with freshly ground pepper just before serving.
