CHICKEN FRIED CAULIFLOWER RICE
Cauli Fried Chicken is a healthy, clean version of the original fried rice recipe that comes together in 10 minutes and tastes amazing!
INGREDIENTS
- 3 eggs
- 3 chicken breasts
- 1/2 onion, diced
- 1 head of cauliflower
- 1 tsp salt
- 1/2 cup carrots, diced
- 1/2 tsp garlic powder
- 2 tbsp garlic, minced
- 1/2 teaspoon black pepper
- 1/4 cup green onions
- 2 tbsp olive oil
- 1 cup green beans, diced
- 1/2 cup Coconut Aminos, Original
INSTRUCTIONS
First, add your olive oil to a large skillet and heat over medium-high heat.
Then, add the chicken breasts. Sauté chicken until golden and cooked through. About 4 to 5 minutes per side.
Remove the chicken from the pan and set aside.
Reduce the heat to medium.
In the same pan (with all the juices and brown pieces from the chicken cooking), add your onions.
Cook for about 3 to 5 minutes until the onions are translucent.
Add your green beans, carrots and garlic to the pan. I like to leave the green beans and carrots a little crunchy so I prefer to sauté them quickly for about 3 minutes. You can cook them longer if you want them soft.
In another bowl, whisk the eggs then pour into the pan. Stir. They will cook quickly (maybe 2 minutes).
To create the "rice", cut the cauliflower florets into large pieces and place them in a high power blender. Mix until the cauliflower is a very small texture similar to rice.
Cut out your cooked chicken.
Add the chicken, cauliflower rice, amino coconut, salt, garlic powder and black pepper to the pan and stir. Cover for 3 to 5 minutes, then remove from the heat. Cauliflower rice cooks very quickly!
Add salt, pepper and coconut to taste. Garnish with green onions and serve! Happy Cooking Time.
