Cauliflower Bacon Gratin Recipe







This cauliflower and bacon gratin recipe is a delicious, low-carb dish to serve for a cozy get-together, a holiday potluck or a weekday meal. The cauliflower gratin wins at every table, because who doesn't like bacon?

Ingredients

  • 2 cups milk
  • 3 tablespoons flour
  • 1/2 cup panko breadcrumbs
  • 3 tablespoons butter
  • 4 cups of cauliflower, cut into bite-sized pieces
  • pinch of fresh parsley, chopped
  • 8 slices of bacon, chopped
  • 1 1/2 cups sharp cheddar plus a little more for topping

Instructions

First, in a large skillet over medium-high heat, cook the bacon until crisp and golden. Book on paper towels.

Then, heat a large pot of salted water over high heat until boiling. Add the cauliflower and cook 2/3 minutes or until it is about halfway. Drain and set aside.

Wipe the same pan and melt the butter. Stir in the flour constantly until golden brown. Stir in milk and stir constantly until it is thick and creamy. Stir in cheese and salt and pepper to taste.

Add the cauliflower and bacon to the cheese mixture and mix. Pour into an 8x8 or similar baking dish and garnish with panko and a pinch of cheese.

Bake at 375F for 20 minutes or until bubbles and golden. Run the grill for a few minutes if desired to make the top even more golden.

Sprinkle with fresh parsley before serving.
