BLUEBERRY LEMON FRITTERS
Delicious fresh blueberry fritters, no yeast required. Consume preferably on the day of their preparation, but they freeze well.
Ingredients
- 1/2 cup milk
- 1/3 cup sugar
- 1/2 tsp salt
- 1/2 tsp vanilla
- 1 tsp baking powder
- 1 cup blueberries
- 1 egg lightly beaten
- 1 tsp lemon zest
- 1 1/4 cup flour
- 1 Tbs melted butter
- Oil for frying
GLAZE
- 4-5 Tbs lemon juice
- 1 1/2 cup powdered sugar
- Zest of 1 lemon
Instructions
First, preheat your fryer to 375.
Then, in a bowl, whisk together the flour, sugar, baking powder and salt.
In another bowl, combine the milk, egg, vanilla, butter and lemon zest.
Slowly mix in your dry ingredients until they are just combined.
Gently fold your blueberries.
Place in tablespoons in hot oil and fry, turning several times for 3-4 minutes.
Unmold on a plate covered with absorbent paper to drain.
To make the icing, mix your powdered sugar, lemon juice and lemon zest.
Dip each of your donuts in the frosting and let set for a few minutes.
