Banana Oatmeal Breakfast Bars








The banana and oatmeal breakfast bars are healthy, plentiful and absolutely delicious! With peanut butter, banana, honey and oatmeal, these delicious bars will keep you going for hours. These breakfast bars are easy to prepare, can be frozen for up to four months, and are also great for snacks.

Ingredients

  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2/3 cup light brown sugar, packed
  • 1 very ripe banana (mine was 115 g)
  • 3/4 cup all purpose flour (or whole wheat pastry flour)
  • 2 cups rolled oats (not instant)
  • 2/3 cup dark chocolate chips

Instructions

First, preheat the oven to 350 degrees. Line an 8 × 8-inch glass baking dish with aluminum foil and lightly spray with a non-stick coating; put aside.

Then, in a large bowl, mash the banana with a fork then add the oil and brown sugar. Using a whisk, mix well until there are no more sugar cubes left.

In a small bowl, whisk together the flour, baking soda, salt, cinnamon and oats until well blended. 
Fold the dry ingredients into the wet ingredients with a rubber spatula until they are combined. Stir in chocolate chips until evenly distributed.

Tap the dough evenly in the prepared pan with the rubber spatula. Bake for 25 minutes, or until the edges are golden and the center is set. Let cool before cutting into squares. Or be careful with the wind and eat them warm directly from the pan. Happy Cooking Time.
